Stuffed Pepper Polenta Cups – Kids Food

This a simple, sumptuous, healthy recipe to serve as morning breakfast or evening fill for the tired kids after play. They love this stuffed pepper polenta cups recipe as it’s an “eye-catching”, “tongue-licking”, and “pleasing aroma”.

What is Polenta?

A northern Italian dish called polenta is prepared from yellow cornmeal. When freshly prepared, it has a porridge-like texture and is soft and creamy. It gets stiff enough as it cools to cut with a knife with ease.

What you require are as follows:

1. Water, Vegetable stock, or Chicken stock: 750ml
2. Polenta: 250g
3. Peppers: 6 (Red, Amber, and Green) that have been halved, cored, and deseeded Thinly sliced pepper
4. Mozzarella Cheese: 250 g
5. Parmesan Cheese: Grated for sprinkling (optional)



How to execute:

Prepare the polenta:

The usual proportion is one part polenta to four parts water, but I prefer to measure the polenta at just a tiny fraction of a cup. In place of water, I frequently use chicken broth.

Step 1:

• In a big saucepan, bring the stock or water to a boil.

Step 2:

• Pour the polenta into a steady stream while stirring constantly. Sprinkle on some black pepper.
Stir frequently while simmering for 25 to 30 minutes, or until the polenta is practically impossible to stir.


Step 3:

• Pre-heat the oven and grease a large baking sheet (180 degrees C or 350 degrees F),

Step 4:

• Fill the hollow sides of the peppers with polenta, then place them flat against each other on the baking pan to prevent spillage. For 45 minutes, bake.

Step 5:


• Cut the mozzarella pieces to fit before placing them on top of the baked polenta filling. If using, top with Parmesan and bake for an additional 5 minutes, or until the mozzarella begins to melt.

• Place Red, Amber, and Green peppers on each plate. Serve with crusty whole wheat bread with boiled broccoli or spinach.
