How To Make Roasted Creamy Tomato Soup | Healthy Tomato Soup

The best form of homemade comfort food is a simple bowl of tomato soup. This dairy-free 30-minute recipe uses only roasted fresh tomatoes, onion, broken bread crumbs, and herbs to make a thick, creamy tomato soup. For dipping, serve with toasted bread or grilled cheese bread.

  • 5 medium-sized vine-ripe tomatoes 
  • 1-pint cherry tomatoes 
  • 1/2 white onion sliced 
  • 4-5 fresh basil leaves 
  • For garnishing oregano sprig 
  • heavy cream 
  • smoked sea salt to taste
  • black pepper to taste

Tomatoes: Make use of the ripest and tastiest tomatoes you can find. Tomato soup is usually made with Roma tomatoes.

Onion: It’s best to use a white onion. When onions are roasted, their natural sugars become more powerful, adding a layer of flavour to the soup.


Garlic: 1 tablespoon grated or pressed garlic or one or two plump peeled garlic cloves. Along with the garlic, the tomatoes are roasted. Because tomatoes and garlic are a match made in heaven! When roasted, they also provide a lot of flavour and sweetness.

The natural sweetness of the onions and tomatoes is intensified and brought out by a modest amount of sugar (only 1/2 teaspoon).

Basil: It’s better if you have fresh basil on hand. Also wonderful are dried pantry herbs like thyme, oregano, or basil.

For the preparation of a creamy roasted tomato soup, follow these steps:

  • To begin with, roast the tomatoes. Place the tomatoes, garlic cloves, a big glug of olive oil, and salt & pepper on a large baking tray.
  • Place the tomatoes in the oven for 25-30 minutes, or until they have burst and blistered. Place it on low heat in a pot with the vegetable stock.
  • Add fresh basil and a generous quantity of black pepper to taste. Blitz with a hand blender until smooth. However, you can blend it to your liking.
  • This silky-smooth roasted tomato soup can be served in a variety of ways.
  • For added taste, add garlic powder, onion powder, or dried oregano and parsley.
  • To serve, ladle the soup into bowls and top with fresh basil and a spoonful of heavy cream.

A delicious grilled cheese sandwich works best with this soup, but you can also serve it with baked or fried mozzarella sticks, pita chips, or even these lovely Italian breadsticks.
