Veg Thai Green Curry Recipe

Here’s a scrumptious recipe for Veg Thai Green Curry with vegetables. One of the most popular dishes in Thai restaurants both in Thailand and other countries. Many dishes taste better with this spicy, creamy, and aromatic Thai basil dish served over jasmine rice. 

Make the Thai Green Curry paste ahead of time and serve it with hot steamed rice or fried rice for a quick weeknight dinner. It tastes so good that we’ve been making it almost every weekend. I add a lot of vegetables to the curry. The texture and aroma are both comforting and flavorful.

The Vegetarian Thai Green Curry is made from homemade Thai green curry paste, vibrant fresh hot chilli peppers, and green coriander leaves, ground with lemon grass, and I like to load it with the best vegetables, making it simply delectable and spicy.

Ingredients

Preparation of Thai Green Curry Paste

  • 5 Stalks of Lemongrass
  • 3 Green Chillies, chopped
  • 1/4 cup Coriander Leaves, chopped
  •  3 sprigs of basil leaves
  •  1 tablespoon of coriander seeds, whole roasted
  •  1 teaspoon of cumin seeds, roasted
  • 1 teaspoon Whole Black Peppercorns
  • 1 Onion, roughly chopped
  • 1/4 cup Spring Onion (Bulb & Greens), roughly chopped
  •  3 cloves of garlic
  • 1 inch Ginger
  • Salt, to taste
  • Preparation Of Thai Green Curry
  • 500 ml Coconut milk,
  • 3 tablespoons Thai green curry paste
  • 1 cup Broccoli, florets
  • 1 Carrot, sliced
  • 1 Red Yellow or Green Bell Pepper (Capsicum), diced
  • 1/2 Green zucchini, quartered or thickly sliced
  • 1 cup Water, or vegetable stock
  • 1 tablespoon Brown Sugar 
  • 1 sprig of Basil leaves, 
  • Salt, to taste
  • 1 teaspoon Oil

I prefer my curry to be green, so I grind some fresh coriander leaves or even Italian parsley.

The vegetables for the curry are entirely up to you and your taste. You can select from the following combinations. when I add my vegetables to the curry because the list is so creative. So make your own.

  • Red bell peppers, zucchini,
  • Peas and beans
  • Tofu, peppers, and snow peas
  • mushrooms, and ginger

Recipe for Vegetarian Thai Green Curry

Green Curry

To begin making the Vegetarian Thai Green Curry recipe, make the Thai Curry paste first.

To do so, we must first prepare the lemongrass. We must first remove and discard any root section below the bulb base. We will also remove the dried portion of the root until we know the root cuts easily and is tender.

Repeat the process with the remaining lemon grass stalks.

In a blender, combine all of the paste ingredients, along with a little water. Cover the blender and blend the mixture until it forms a smooth paste.

After a few seconds, open the blender and stir in the remaining ingredients for the paste: green chillies, coriander leaves, basil leaves, coriander seeds, cumin seeds, peppercorns, onions, spring onions, garlic, ginger, and salt.

If necessary, add a little more water to make a smooth paste.

Transfer the Thai curry paste to a glass jar and set it aside. A single recipe of Thai curry requires only 3 tablespoons of paste. So, you can make Thai curry at least three times with this paste.

Thai Green Curry Preparation Method

This paste will then be used to make the Vegetarian Thai Curry. In a heavy wok, heat a teaspoon of oil. Include vegetables such as carrots, zucchini, broccoli, and bell peppers.

Stir in some salt and cook the vegetables on high heat until they are lightly tender. When the vegetables are tender, remove them from the heat and set them aside.

In a hot wok, add a teaspoon of oil, then 2 to 3 tablespoons of Thai curry paste, and sauté for a few seconds in the oil.

Next, add a cup of water and stir it into the curry. After that, we’ll add a tablespoon of brown sugar and 500 mL coconut milk.

To combine all of the ingredients, stir them together. Once combined, add the salt, stir, and allow the mixture to thicken slightly before bringing to a boil.

When the mixture begins to boil, add the torn basil leaves and stir-fried vegetables. Stir the mixture and bring it to a light boil before serving the Vegetarian Thai curry.
